Heart & Soul is inspired by those people that put their all into what they do. Our food starts with relationships with creators. Farmers, fisherman, divers, cheese-makers, winemakers and more. It ends with our guests that support us.
For us, inspiration is found in the ingredient.
Chef & Founder
While Nicolai's cooking career didn't start in Sacramento his education did at Sacramento State University where he discovered engineering was no way for him to spend his waking hours. Now returning from a long journey at some the best restaurants in the world he is excited to open his own eatery and share his experiences with you.
Front of House Manager
Thomas has been cooking since he moved to San Francisco to go to culinary school. Landing a gig a the now shuttered but celebrated Chez Papa of Mint Plaza. Thomas then moved to the Fifth Floor where he developed a solid base for line skills. He worked a the well know sushi Japanese restaurant Ozumo before taking his first sous chef position at Google. He then went on to The Battery where he spent close to three years and was an imperative part of its transformation. Now living in Sacramento Thomas has taken the helm of this small eatery kitchen team.
